How is this different to what my accountant already does?
Most accounting relationships are compliance: the return gets prepared accurately and on time. Planning is the work that happens before that, while the numbers can still be influenced. If your accountant only contacts you in filing season, you are buying compliance.
Should I be an S corp?
It depends on what the business earns, how you want to be paid and how much administration you are willing to carry, and the answer changes as those change. It is a real conversation with your figures on the table, not a rule of thumb.
When in the year should we do this?
